Ingredients
Pasta & Proteins:
- 200g spaghetti (or linguine)
- 200g bacon, chopped (thick-cut recommended)
- 2 tablespoons olive oil or butter

Ingredient Notes
• Reserve 1/2 cup pasta water to adjust sauce consistency
• Pancetta can substitute for bacon
• Add 1/4 cup white wine with cream for extra depth
• Freshly grated Parmesan melts more smoothly
Instructions
- Step 1: Boil the spaghetti: In large pot of salted boiling water, cook spaghetti 1 minute less than package directs for al dente. Reserve 1/2 cup pasta water, then drain.
- Step 2: Cook the bacon: Heat oil in large skillet over medium heat. Add bacon and cook until crispy (5-6 min). Transfer to paper towels, leaving drippings in pan.
- Step 3: Sauté vegetables: In same skillet, cook onion until soft (3 min). Add garlic for 30 seconds until fragrant. Increase heat to medium-high, add mushrooms and cook until golden (5-6 min).
- Step 4: Make sauce: Reduce heat to medium. Add cream and simmer 2-3 minutes until slightly thickened. Stir in Parmesan until melted. Mix in 4-5 tablespoons truffle oil.
- Step 5: Combine: Add cooked spaghetti and bacon to skillet. Toss to coat, adding reserved pasta water 1 tbsp at a time if needed. Season with salt and pepper.
- Step 6: Serve: Garnish with parsley and extra Parmesan. Serve immediately with garlic bread or salad.
